Peanut Butter Bars are so drool worthy. If you enjoy chocolate and peanut butter together, you'll find these dessert bars your comfort food of choice. This fantastic peanut butter and chocolate chip brownie has a luscious peanut butter frosting on top. Perfect for tailgating parties, potlucks, backyard barbecues or summer holiday fun like Memorial Day, Fourth of July or Labor Day.

  • 1 9x13" glass baking dish
  • 2 large mixing bowls
  • 1 wooden spoon
  • 1 whisk
  • 1 electric mixer
  • 1 spatula
  • 1 wire cooling rack

Ingredients
  

PEANUT BUTTER BARS:

  • 1/2 cup unsalted butter softened (1 stick)
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar packed
  • 1/2 cup creamy peanut butter
  • 1 large egg
  • 1 tsp. vanilla extract
  • 1 cup UNLBEACHED all-purpose flour bleached flour toughens baked goods
  • 1/2 cup old-fashioned rolled oats
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup semisweet chocolate chips 6 ounces

PEANUT BUTTER ICING:

  • 1 cup confectioners’ sugar
  • 4 tbsp. creamy peanut butter
  • 8 tbsp. 2% milk

Instructions
 

PEANUT BUTTER BARS:

  • In a large bowl, cream the butter, sugars, peanut butter, egg, vanilla, baking powder and salt with an electric mixer until fluffy.
  • Stir in flour and oats with a wooden spoon until well combined.
  • Spray a 13-in. x 9-in. baking dish with cooking spray.
  • Press peanut butter mixture into dish.
  • Sprinkle with chocolate chips.
  • Bake at 350° for 20-25 minutes or until lightly browned.
  • Cool on a wire rack for 10 minutes.

PEANUT BUTTER ICING:

  • Combine powdered sugar, peanut butter and half the milk; whisk until as smooth as possible.
  • Add a tablespoon of the remaining milk at a time and stir until you get the right spreading consistency.
  • Use as little of the remaining milk as possible, but I couldn’t get it to have a spreading consistency until I used it all.
  • Drizzle icing over top of bars.
  • Cool completely.
  • Cut into bars.
