Grilled Rosemary Swordfish

Grilled Rosemary Swordfish is so delectable and succulent. This swordfish recipe is prepared in a tasty and easy marinade and grilled to perfection. Lemon, olive oil, rosemary, and parsley flavor this delicious seafood entree. It's perfect for weeknight dinners when you're short on time, because it can be ready to serve in about 20 minutes. If you enjoy fish this should be on your regular dinner menu. Gluten free, low calorie and clean eating.

Equipment

  • 1 gas or electric grill
  • 1 small mixing bowl
  • 1 wooden spoon
  • 1 pastry brush
  • measuring spoons
  • 1 whisk

Ingredients
  

  • 3 swordfish steaks
  • 2 tbsp. olive oil
  • 2 tbsp. lemon juice
  • 2 tsp. rosemary
  • 1 tsp. Kosher salt or sea salt
  • 1/4 tsp. ground black pepper
  • 2 tbsp. fresh parsley
  • 1 heaping tsp. minced garlic from a jar or two cloves fresh garlic, finely minced

Instructions
 

  • Heat grill.
  • Spray grill with cooking spray or brush with oil to prevent sticking.
  • While grill is heating, make marinade.
  • Mix olive oil, lemon juice, rosemary, salt, pepper, garlic and parsley in a small bowl.
  • Stir or whisk to combine.
  • Spread one-fourth of the marinade on one side of all the fish; turn fish over and spread with another one-fourth of the marinade.
  • Place swordfish steaks on grill.
  • Spread one-fourth of the marinade on top of the swordfish steaks (again) and grill over hot heat 5-10 minutes (5 for a gas grill and 10 for an indoor grill).
  • Cover grill.
  • Turn swordfish steaks over and brush with remaining marinade.
  • Cover grill again and grill fish another 5-10 minutes or until fish flakes easily with fork.
