Sun Dried Tomato Hummus

Teresa Ambra
Sun Dried Tomato Hummus is a fabulous appetizer that includes sun-dried tomatoes, garbanzo beans and sesame tahini. A little cayenne pepper provides just a smidge of heat causing an explosion of flavor. It's the perfect appetizer for potlucks, tailgating parties or grilling out with friends. It can be served with crackers, chips, or veggie dippers. This quick and easy appetizer can be whipped up in about 5 minutes! It's healthy, low calorie, gluten free and vegan.

Equipment

  • 1 blender
  • measuring cups
  • measuring spoons
  • 1 plate
  • 1 fork

Ingredients

  • 2 cloves garlic finely minced
  • 15 oz. can garbanzo beans liquid reserved and beans mashed with a fork
  • 2 tbsp. tahini sesame paste
  • 1/2 to 2/3 cup reserved garbanzo bean liquid
  • 1 lemon use juice only
  • 1 tsp. reduced-sodium tamari soy sauce (this soy sauce is gluten free)
  • 1 1/2 to 2 tbsp. olive oil or more for creaminess
  • 1 tsp. sea salt or kosher salt
  • 1/2 cup sun-dried tomatoes with Italian herbs I used Bella Sun Luci
  • 2 dashes cayenne pepper

Instructions

  • Drain garbanzo beans, reserving water.
  • Mash garbanzo beans on a plate with a fork.
  • Set aside.
  • Put garlic, tahini, reserved garbanzo bean water, lemon juice, tamari, olive oil, salt and sun dried tomatoes in blender or food processor.
  • Add mashed garbanzo beans last.
  • Pulse or process until thoroughly mixed.
  • If necessary, add additional olive oil to make smooth.
  • Serve with vegetable dippers.

Notes

NOTE:  If purchasing jarred sun-dried tomatoes, don’t drain the tomatoes or remove any excess oil from the tomatoes when adding to the hummus. You will want all the flavors to be included.

NOTE: I used sun-dried tomatoes with Italian herbs (in a package, not the kind in the jar). But either will work.

NOTE: For a creamier texture, mash the garbanzo beans before blending in mixer.
