Jalapeno Cheddar Roll Ups

Jalapeno Cheddar Roll Ups are outstanding. This amazing Tex-Mex appetizer uses refried beans, olives, green onions, bell pepper, diced tomatoes with green chilies, cheese and cilantro. It's wrapped up in wonderful Jalapeno cheddar wraps for even more bite. These appetizers are terrific for tailgating parties, potlucks, backyard barbecues and especially for sporting events like the Super Bowl or March Madness.

  • 1 mixing bowl
  • 1 wooden spoon

Ingredients
  

  • 15 oz. can refried beans
  • 15 oz. can diced tomatoes with green chilies drained
  • 8 oz. pkg. cream cheese softened
  • 8 oz. bag Monterey Jack/Colby cheese blend shredded
  • 2.25 oz. can ripe olives sliced, drained and patted dry
  • 1 cup sour cream
  • 6 green onions sliced thin
  • 1/3 cup fresh cilantro chopped
  • 1/2 red bell pepper diced
  • 9 Jalapeno cheddar wraps or large tortillas

Instructions
 

  • Soften cream cheese and place in large mixing bowl.
  • Add sour cream, refried beans, diced tomatoes with chilies, cheese, olives, green onions, bell pepper and cilantro and stir to combine.
  • Spread roll up mixture onto Jalapeno cheddar wraps to the edges.
  • Roll up very tightly, but carefully so the tortillas don’t tear; seal the edges.
  • Wrap in plastic wrap.
  • Refrigerate a few hours or overnight.
  • To serve: Cut roll ups in 1 to 2-inch slices.
  • Makes about 4 to 4 ½ dozen.

Notes

NOTE: If you prefer, you can mix the cream cheese and sour cream with an electric mixer. Add refried beans and mix again. Then stir in tomatoes, cheese, olives, green onions, bell pepper and cilantro.
