Hawaiian Chicken is a mouthwatering main dish entree that's completely irresistible. This amazing Polynesian style chicken main dish includes bell peppers, pineapple and water chestnuts in a tasty soy sauce. Serve with hot, cooked rice. Great dinner for weeknight family dinners or for company meals.

4 chicken breasts boneless, skinless 1 cup cornstarch more or less to adequately dredge the chicken pieces 3-4 tbsp. soy sauce 3 tbsp. avocado oil 1/2 tsp. salt 4 tbsp. chicken stock (you can also use about 2 tsp. chicken bouillon plus 1/4 cup water) 1 each red bell pepper cut in squares or strips 1 green bell pepper cut in squares or strips 16 oz. can pineapple chunks in syrup 1 medium onion cut in thin strips 1 can water chestnuts sliced and drained 2 heaping tablespoons light brown sugar packed
Cut meat into bite-sized pieces.
Roll chicken in cornstarch.
Heat oil, add chicken.
Cook quickly until meat is opaque, stirring and turning meat over with a spatula.
Add red and green bell peppers and onion strips.
Stir and cook 3 minutes.
Combine stock, salt, soy sauce, pineapple, water chestnuts and brown sugar in a small bowl or measuring cup and add to skillet.
Cook until thick, about 5-10 minutes.
Serve over rice.
NOTE: If the sauce thickens too much, you can add up to an additional cup of water or chicken stock to dilute some.
