Pineapple Carrot Bread

Pineapple Carrot Bread is reminiscent of Carrot Cake with carrots and pineapple, but without the extra sugar and icing on top! This delicious breadmaker bread is marvelous as a dinner bread or for breakfast with Apple Butter or preserves. Tasty homemade bread makes a 2-lb. loaf.

Equipment

  • 1 breadmaker
  • measuring cups
  • measuring spoons
  • 1 electric knife preferred, or a bread knife to cut bread
  • 1 pastry brush to brush bread with butter after it's baked
  • 1 grater if carrots are not previously shredded

Ingredients
  

  • 1 cup buttermilk I used 1 cup milk and 2 tbsp. white vinegar
  • 10 oz. crushed pineapple drained
  • 2/3 cup carrots or matchsticks carrots, coarsely shredded
  • 4 tsp. avocado oil or canola oil
  • 2 2/3 cups whole wheat flour
  • 1 1/3 cup bread flour NOT all-purpose flour
  • 4 tsp. honey or brown sugar
  • 1 tsp. sea salt or kosher salt
  • 1 1/4 tsp. bread machine yeast (Fleischmann's preferred over Red Star)
  • 4 tsp. vital wheat gluten

Instructions
 

  • Layer ingredients into breadmaker canister as listed.
  • Place on whole wheat setting.
  • Mine takes 4 hours 10 minutes.
  • Remove from breadmaker oven about 15 minutes after cycle is complete.
  • Butter the top and sides of bread with butter to prevent hardening of crust.
  • Slice down. 2-lb. loaf.
  • Approximately 14 half slices.

Notes

NOTE: Homemade bread has no preservatives so it must be refrigerated after 2 days.
 
NOTE: all-purpose flour does not contain the necessary gluten to bond the ingredients together as well as bread flour. The bread may turn out crumbly. For best results use bread flour.
 
NOTE: I recommend using Fleischmann's yeast or bread machine yeast in any yeast bread recipe. Red Star yeast just doesn't work as well.
 
NOTE: This recipe needs vital wheat gluten to help it raise sufficiently.
