Bacon, Swiss, Tomato and Avocado Sandwiches

Spectacular sandwich with bacon, Swiss cheese, tomatoes and avocado slices. Hearty, filling and very satisfying. This works better on a sturdy bread or Artisan bread. It's perfect for tailgating parties or busy weekend meals when you're short on time.

Equipment

  • 1 large skillet or griddle
  • 1 spatula
  • 1 sharp knife to cut vegetables
  • measuring spoons

Ingredients
  

  • 3 slices bacon microwaved 3-4 minutes until cooked crisp
  • 1/2 tomato thinly sliced
  • 1/2 avocado thinly sliced
  • 4 slices Swiss cheese
  • 2 slices hearty thick-sliced bread or Texas Toast
  • 1/4 tsp. Salt and pepper to taste
  • 1 tbsp. unsalted butter

Instructions
 

  • Microwave bacon and set aside.
  • Place bread on a plate.
  • Place a piece of cheese in the middle of each piece of bread.
  • Cut remaining two slices in half.
  • Place a half on each side of the center piece of cheese for both pieces of bread.
  • Add a layer of overlapping tomato slices on one piece of bread.
  • Add a layer of overlapping avocado slices overtop of the tomatoes.
  • Sprinkle both pieces of bread generously with salt and pepper.
  • Place cooked bacon strips on top of the avocados.
  • Invert remaining piece of bread with cheese over top of bacon.
  • Melt butter in a 10-to 12-inch cast iron skillet, other skillet or griddle over medium heat.
  • Place sandwich in middle of skillet.
  • Do your best to cover the sandwich with a lid (the sandwich will probably be too high), so the cheese can melt.
  • I laid the lid on top of the bread.
  • Cook over medium heat 5-10 minutes.
  • Very carefully, turn the sandwich over with a large heavy duty spatula (so that all the ingredients don’t fall out into the pan).
  • Cover again with lid.
  • Grill the other side of the bread an additional 5-10 minutes until cheese is melted.
  • Carefully insert long spatula under sandwich and transfer to serving plate.

Notes

NOTE: If you are struggling trying to get the cheese to melt, then place the sandwich on a microwavable plate and microwave about 10-15 seconds on high, or until cheese melts slightly.
 
 
NOTE: Yields: one monster sandwich! For most people this would be considered two servings!
 
 
NOTE: This works better with a thick-sliced sturdy Artisan bread or Texas Toast.
