Chocolate Chip Banana Coffee Cake is rich, decadent, chocolaty and absolutely divine! This scrumptious breakfast coffee cake is loaded with miniature chocolate chips, bananas and walnuts. Then it's topped with a luscious, fudgy chocolate glaze. Every bite will have you drooling. This can be served for breakfast or dessert. It makes a great addition to a holiday or company breakfast.

Equipment

  • 1 12-inch cast iron skillet
  • 1 large mixing bowl
  • measuring cups

  • 1 medium mixing bowl
  • 1 electric mixer
  • 1 whisk

  • 1 nut chopper if nuts are not previously chopped

Ingredients
  

COFFEE CAKE:

  • 1/2 cup unsalted butter softened (1 stick)
  • 2 large eggs
  • 2 cups bananas mashed
  • 1 1/2 tsp. vanilla extract
  • 1 cup granulated sugar or you can use honey
  • 3/4 tsp. baking powder
  • 1/2 tsp. sea salt or kosher salt
  • 1/2 tsp. baking soda
  • 2 1/4 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
  • 10 oz. bag miniature chocolate chips
  • 1 cup walnuts finely diced (measure after chopping

CHOCOLATE GLAZE:

  • 2 tbsp. cocoa powder
  • 3/4 cup powdered sugar
  • 1 tsp. vanilla extract
  • 1 tbsp. half-and-half

Instructions
 

COFFEE CAKE:

  • Place bananas on a plate; mash with a fork; set aside.
  • Place butter, eggs, bananas, vanilla, granulated sugar, baking powder, salt and baking soda in a mixing bowl and mix with an electric mixer until combined.
  • Add flour, miniature chocolate chips and walnuts and stir with a wooden spoon until combined.
  • Do not overmix.
  • Grease and flour a 12” cast-iron skillet or a 9x13" baking dish.
  • Pour coffee cake mixture into prepared skillet
  • Bake at 350° for about 45-55 minutes until toothpick inserted in center comes out clean.
  • Cool completely before adding Chocolate Glaze.

CHOCOLATE GLAZE:

  • Whisk ingredients in a small mixing bowl to combine.
  • Drizzle over cooled coffee cake.

Notes

NOTE: This recipe can also be baked in a greased and floured 9x13" glass baking dish. It will probably take between 45-60 minutes.
 
 
NOTE: This coffee cake is also good with peanut butter chips, butterscotch chips, cinnamon chips, vanilla chips or white chocolate chips although chocolate chips are our favorite.
