Grilled Swiss Cheese and Tomato Sandwiches

Grilled Swiss Cheese and Tomato Sandwiches are utterly irresistible. This has been our favorite way to make Grilled Cheese Sandwiches for decades. These use Swiss cheese instead of cheddar cheese for a wonderful, savory flavor. Great for tailgating parties or for a quick lunch or dinner menu. Add Tomato Soup and you have a comfort food meal that will knock your socks off.

Equipment

  • 1 large skillet or griddle
  • 1 sharp knife to cut vegetables
  • 1 spatula
  • measuring spoons

Ingredients
  

  • 2 slices bread Texas Toast, Ezekiel Bread or your favorite sturdy bread
  • 2 slices Swiss cheese
  • 3-4 tomato slices sliced really thin
  • 1/4 tsp. Salt and pepper to taste
  • 2 tbsp. unsalted butter for frying

Instructions
 

  • Place bread on counter or plate.
  • Place a piece of Swiss cheese on each slice.
  • Layer one piece of bread with tomatoes.
  • Sprinkle generously with salt and pepper.
  • Place remaining piece of Swiss Cheese over top of the tomatoes and cover with bread.
  • Meanwhile, melt about a tablespoon of butter in a skillet over low to medium heat.
  • Place sandwich in skillet and cook for about 5 minutes until the underneath browns lightly.
  • Remove sandwich with a spatula.
  • Add another tablespoon of butter and melt in skillet.
  • Flip sandwich over so remaining side browns nicely, about another 5 minutes.
  • If the cheese hasn’t melted, cover with a lid for a few minutes.
  • Remove from skillet and place on a plate.
  • Cut sandwich in half.

Notes

NOTE: Don’t cook sandwiches on too high of a heat with a cast-iron skillet or the sandwiches will start smoking and scorch.
 
NOTE: It is better to cook the sandwiches over a lower heat for a little longer so the cheese melts nicely.
 
NOTE: If the bread is browned and the cheese hasn’t melted sufficiently, place sandwich on a microwavable plate and microwave for about 10-15 seconds.
