Sweet Potato Fries with Garlic Herb Sauce

Sweet Potato Fries with Garlic Herb Sauce is fantastic. This delicious sweet potato oven fry recipe is spread with a luscious garlic herb sauce. It's perfect for weeknight, company or holiday dinners. Gluten free and vegan.

Equipment

  • 1 vegetable peeler
  • 1 sharp knife to cut vegetables
  • 1 large 10x15" glass baking dish
  • 1 spatula
  • 1 pastry brush
  • measuring cups
  • measuring spoons
  • aluminum foil

Ingredients
  

  • 2 large sweet potatoes sliced in thin wedges
  • 2-3 tbsp. olive oil
  • 1/2 tsp. cracked salt and pepper to taste
  • 1/3 cup olive oil
  • 1 heaping tablespoon dried parsley
  • 2 tbsp. fresh thyme
  • 1/4 cup fresh chives diced, or about 1 tbsp. dried chives
  • 1 heaping teaspoon minced garlic from a jar or 2 cloves garlic, minced

Instructions
 

  • Peel potatoes and cut into wedges.
  • Spread sweet potato wedges on the bottom of a 10”x15” baking dish that has been sprayed with olive oil cooking spray.
  • Brush sweet potatoes with 2-3 tbsp. olive oil, then sprinkle with cracked salt and pepper.
  • Cover dish with foil and bake at 350° for about 20 minutes.
  • Remove foil and turn potatoes over so other side can cook.
  • Bake another 20-25 minutes, covered, or until fork tender.
  • Meanwhile, to 1/3 cup olive oil, add parsley, thyme, chives, and minced garlic.
  • Stir to combine.
  • Brush garlic and herb butter over top of the sweet potato fries.
  • Place in oven for 5 minutes longer.
