Potatoes with a kick! Tasty Cajun Fries are seasoned with Cajun Seasoning and parsley. They're healthy, low calorie, gluten free and vegan. Great side dish for any kind of meat entree.
4largeRusset potatoespeeled and sliced in long wedges for French fries (or use Yukon gold potatoes)
2tbsp.olive oilor more if desired
1/2 to 1tsp.cajun seasoningor more as desired
1/2 to 1tsp.dried parsley
Instructions
Peel potatoes, slice in long wedges and place in cold ice water for ten minutes to soak.
Spray a 10x15” glass baking dish with cooking spray.
Pat potatoes dry with towel and spread into pan.
Carefully sprinkle with Cajun seasoning – as much as you desire – a half to one teaspoon. Or, if you’re a big Cajun seasoning fan add more if you can handle the heat!
Sprinkle with parsley.
Bake at 350° about 30 minutes (covered or uncovered—mine were uncovered), and turn potatoes over with spatula.
Sprinkle with more Cajun seasoning and parsley.
Bake another 30 minutes or until potatoes are fork tender.
If desired glaze with another tablespoon or two of olive oil.
Notes
NOTE: You can cook these for a shorter time at a much higher heat but I was baking homemade bread at the time so I needed to stay at this temperature so it took a little longer.NOTE: I used about 1/2 teaspoon of Cajun seasoning on each side of the potatoes, but feel free to use more if you like stronger Cajun taste.NOTE: You can use any kind of potatoes in this recipe: Yukon gold and large red potatoes are also good for this side dish.
