Fried Sweet Potatoes

Tasty and savory way to make sweet potatoes--either as a side dish for meats or as a side for breakfast. This gluten free recipe can easily be made vegan by substituting oil for the butter in the recipe. If you enjoy sweet potatoes, this is a delicious way to eat them.

Equipment

  • 1 large skillet
  • 1 spatula
  • measuring cups
  • measuring spoons
  • 1 sharp knife to cut vegetables

Ingredients
  

  • 2 large sweet potatoes peeled
  • 1 large onion sliced and separated into rings
  • 1/2 cup red bell pepper diced
  • 1/2 cup yellow bell pepper diced
  • 1/2 tsp. sea salt or to taste
  • 1/4 tsp. pepper or to taste
  • 1 tsp. dried parsley
  • 1 tsp. Italian seasoning
  • 2 tbsp. avocado oil olive oil

Instructions
 

  • Melt oil in a skillet or cast iron skillet over low heat.
  • Add potatoes, onions, and bell pepper.
  • Season with salt, pepper, Italian seasoning and parsley.
  • Stir to combine.
  • Cover with lid and cook over low heat about 30-40 minutes until sweet potatoes are fork tender.
  • Turn potatoes over with large spatula EVERY five minutes to prevent them from sticking to the pan.
