Cracked Wheat Bread is such a delicious homemade bread recipe. This one uses whole wheat flour and cracked wheat for extra fiber and whole grain goodness. It's much healthier than many whole wheat bread recipes. It's also spectacularly easy since it's made in the breadmaker! We love to serve this bread with soup or chili on cold, winter nights. But it's also good served for breakfast with jam or jelly on top.
1 pastry brush to brush the bread with butter after it bakes
1 electric knife to cut bread in slices or a sharp bread knife
Ingredients
1 1/2cupshot water
2tbsp.powdered milk
2tbsp.Crisco shorteningor avocado oil (preferred)
2tbsp.honeyor granulated sugar
1 1/2tsp.sea saltor kosher salt
1cupwhole wheat flour
2 1/4cupsbread flourNOT regular all-purpose flour
3/4cupcracked wheat
1 1/4tsp.bread machine yeast
4tsp.vital wheat gluten
Instructions
Measure ingredients into bread canister in order given.
Bake on whole wheat setting. Mine takes 4 hours and 10 minutes.
Allow to cool about 15 minutes before removing loaf from canister.
Butter sides and top of bread with butter to prevent the crust from hardening.
Slice down and serve.
About 20 half slices.

NOTE: Homemade bread has no preservatives and must be refrigerated after 2 days.NOTE: all-purpose flour does not contain the necessary gluten to bond the ingredients together as well as bread flour. The bread may turn out crumbly. For best results use bread flour.NOTE: I recommend using Fleischmann's yeast or bread machine yeast in any yeast bread recipe. Red Star yeast just doesn't work as well.NOTE: Cracked wheat is usually found in the cereal sections of Whole Foods stores like Sprouts or Trader Joes. Bob's Red Mill is one of the brands that sells it.
