Cucumbers in Sour Cream

Cucumbers in Sour Cream is a favorite vintage recipe from our Grandmother's Days! This tasty side dish is great on hot summer days. Serve at any backyard barbecue or day when you're grilling outside. Great way to use up excess garden produce, too!

3 cucumbers peeled and sliced 1 medium onion sliced thinly and separated into rings 1 cup sour cream 1/4 cup apple cider vinegar 1/4 cup granulated sugar 1/4 tsp. salt 1/4 tsp. ground black pepper or more to taste 1/4-1/2 tsp. dill weed if desired
Layer cucumbers and onion in bowl.
Mix sour cream, vinegar, sugar, salt, pepper and dill weed in a small bowl with a whisk.
Pour over cucumbers and onions.
Stir to combine.
Refrigerate until ready to serve.
Stir a few times before serving to marinate cucumbers.
NOTE: Although Grandma never used dill weed, we've always liked the addition in this recipe when we make it.
