Slow Cooked Pepper Steak is one of those vintage recipes that's irresistible. This tasty Pepper Steak dish is made in the crockpot. It has a wonderfully savory and flavorful sauce. Serve over hot cooked rice or noodles. This gluten free recipe is great for family or company dinners.
4tomatoescut up, or 16-oz. can tomatoes with liquid
1largeorange bell pepper cut into strips
1largebell pepper cut into strips
1largered bell pepper cut into strips
8oz.fresh mushroomssliced
1/2cupcold water
1/4cupcornstarch
6cupsCooked riceor noodles
Instructions
Cut beef into strips.
Transfer to slow cooker.
Combine next eight ingredients; pour over beef.
Cover and cook on high - about 2-3 hours until meat is tender.
Add tomatoes, mushrooms, and bell peppers; cook on low for 1 to 2 hours longer, when veggies are fork tender.
Combine the remaining water and cornstarch in a small bowl with a whisk to make a paste; stir into liquid in slow cooker and cook on high until thickened.
Repeat with more water and cornstarch, if necessary, to thicken mixture according to your tastes.
Serve over noodles or rice.

NOTE: Check seasonings. You may want to increase the ginger and salt and pepper, as desired.
