Canadian Cheese Soup in sensational! This heart-warming soup is made with ham, red potatoes, carrots, onions, leeks and a delicious cheesy cream sauce. It's a comfort food recipe that really sticks to the ribs. Also the perfect entree for fall & winter nights. This recipe is gluten free.

CANADIAN CHEESE SOUP: 3 cups chicken broth 4 medium potatoes cubed 1 cup celery chopped 1 cup carrots sliced 1/2 cup onions diced 1 leek green top removed, washed thoroughly and sliced 2 tsp. sea salt or kosher salt 1/2 tsp. pepper 2 cups cooked cubed ham CHEESE SAUCE: 1/2 cup unsalted butter 1/2 cup gluten free flour or regular all-purpose flour 1 qt. whole milk I use half-and-half or cream 1 lb. sharp cheddar cheese shredded, any kind can be used, and can be multiple kinds
CANADIAN CHEESE SOUP: Simmer first eight ingredients together until the vegetables are tender.
Make a cheese sauce (ingredients below).
Add the thickened cheese sauce to the vegetable soup.
Add ham and heat through.
CHEESE SAUCE: Melt butter in saucepan over medium heat.
Whisk in flour to combine.
Slowly add cream about 1/4 cup at a time until fully combined.
Add cheese and stir until completely melted - about 5 minutes more.
Add cheese sauce and ham to sauce pot with veggies.
Stir to combine.
Serve.
NOTE: Regular all-purpose flour can also be used.
