Chocolate Funfetti Cookies are just what the doctor orders when you need a chocolate fix! These luscious, chocolaty cookies are loaded with sprinkles. This easy recipe starts with a cake mix and only takes about 5 minutes to stir together. Baked and ready to eat in less than half an hour! Marvelous for tailgating parties, potlucks, Christmas Cookie Exchanges and sporting events like the Super Bowl, March Madness or NASCAR races!

Equipment

2 18x26" large cookie sheet pans
1 large mixing bowl
1 wooden spoon
1 large cookie scoop
measuring spoons
measuring cups
1 spatula

Ingredients

1 box Triple Chocolate Fudge Cake Mix this cake mix has miniature chocolate chips inside
1/3 cup canola oil or use coconut oil or avocado oil
1 tbsp. real vanilla extract
2 large eggs
1 tsp. baking powder
1 cup rainbow sprinkles jimmies not nonpareils

Instructions

Stir baking powder into cake mix.
Add oil, eggs, vanilla and sprinkles.
Stir really well with a wooden spoon to combine.
Scoop dough with a large cookie scoop.
Place on cookie sheets sprayed with cooking spray.
Bake at 350° for about 12 minutes or until done.
Rotate cookie sheets on oven racks about half way through cooking time.
Cool.

Notes

NOTE: For the right texture and ratio of ingredients, I would not substitute a cheaper generic cake mix. (I used Betty Crocker.)
