Funfetti Cake Batter Cookies

Funfetti Cake Batter Cookies are fun and delightful! These amazing cookies begin with a French vanilla cake mix and are loaded with sprinkles. They're so cute and adorable. Quick and easy and great for holiday baking, tailgating parties, potlucks and sporting events like the Super Bowl, the Stanley Cup playoffs or March Madness.

Equipment

2 large 18x26" cookie sheet pans
1 large mixing bowl
1 large cookie scoop
measuring cups
measuring spoons
1 wooden spoon
1 spatula

Ingredients

15 oz. box French Vanilla Cake Mix
1 tsp. baking powder
2 large eggs
1/3 cup canola oil or use coconut oil or avocado oil
1 tsp. real vanilla extract
1 cup Rainbow Jimmies sprinkles NOT nonpareils

Instructions

Preheat oven to 350°.
In a large bowl, mix together the cake mix and baking powder.
Add the eggs, oil, vanilla and sprinkles and mix again until ingredients are very well combined.
Scoop with a small cookie scoop and place on a cookie sheet that has been sprayed generously with cooking spray.
Bake for 12-13 minutes.
Rotate cookie sheets on oven racks half way through baking time.
Cool.

Notes

NOTE: I decrease the amount of oil slightly in this recipe because my first batch turned out a little flat. This batch turned out a lot better.

NOTE: If you use nonpareils rather than jimmies the color bleeds into the cookie dough and you will have a lavender-colored cookie instead.
