Chicken or Tuna Tempter

Chicken or Tuna Tempter is a fantastic way to enjoy the old-fashioned vintage Tuna Casserole recipe. This version of chicken or tuna noodle casserole uses peas, pimientos or red bell peppers, cream of celery soup, and buttered, seasoned bread crumbs on top. It's easy to make and stretches far, making it the perfect main dish entree for hungry family members. Our children always enjoyed this recipe whether it was made with tuna or chicken. I'm sure your family will too!

1 2 or 3 quart glass baking dish or 9x13" glass baking dish
1 large sauce pan or stock pot
1 colander
measuring cups
measuring spoons
1 sharp knife to cut vegetables
1 wooden spoon
1 small bowl
1 fork
2 tbsp. unsalted butter 1/4 cup onion chopped 1 1/4 cups 2% milk 1/2 cup celery thinly sliced 1 can cream of celery soup 2 tbsp. diced pimientos or ½ red bell pepper, diced 2 tbsp. unsalted butter melted 1 cup frozen peas (or frozen peas and carrots) 7 oz. can tuna drained, or two cups diced chicken 1/4 cup dry Italian bread crumbs 8 oz. box sea shell macaroni cooked 6 minutes, drained (can also substitute bow-tie or rotini)
In saucepan, melt 2 tbsp. butter over medium heat.
Add celery and onion. (If using bell pepper, add now).
Cook, stirring, 3 minutes.
Stir in soup, milk, pimientos until blended; turn off heat.
While cooking vegetables, boil water in stock pot and cook noodles.
Drain noodles in colander; set aside.
In 2-qt. greased casserole toss macaroni, tuna (or chicken) and peas.
Pour sauce over macaroni mixture.
Mix bread crumbs with melted butter in a small bowl with a fork.
Sprinkle over top of casserole.
Bake in 350° oven for 25-30 minutes or until bubbly.
NOTE: Also very good with chicken or turkey (use about 2 cups).
