Breakfast Bake is deliciously mouthwatering and irresistible. This delicious holiday breakfast casserole includes sausage, peppers, onions, cheese and hash browns in a lovely Bisquick batter. It's also great for any weekend or company breakfast. Everyone who eats this casserole rates it 5 stars!

Equipment

  • 1 9x13" glass baking dish
  • 1 large skillet
  • 1 large mixing bowl
  • 1 wooden spoon
  • measuring cups
  • measuring spoons
  • 1 sharp knife to cut vegetables
  • 1 hamburger chopper to cut meat down in small pieces while frying

Ingredients
  

  • 32 oz. pkg. bulk pork sausage two 16-oz. pkgs.
  • 1 medium bell pepper chopped, 1 cup
  • 1 medium onion chopped, 1/2 cup
  • 3 cups frozen hash browns mine were thawed
  • 3 cups sharp Cheddar cheese shredded
  • 1 cup original Bisquick baking mix
  • 1/4 tsp. ground black pepper
  • 1/2 tsp. dried thyme
  • 1/2 tsp. dried marjoram
  • 4 large eggs
  • 2 cups 2% milk
  • 1-2 tbsp. dried parsley if desired

Instructions
 

  • Heat oven to 350°.
  • Spray 9x13” glass baking dish with cooking spray.
  • Cook sausage, bell pepper, and onion in large skillet or Dutch oven over medium heat until sausage is cooked through.
  • Use a hamburger chopper to cut meat into small pieces while frying.
  • Drain off grease.
  • Stir together sausage mixture, hash brown potatoes and 1 ½ cups shredded Cheddar cheese.
  • Pour into greased baking dish.
  • In a mixing bowl, stir Bisquick mix, pepper, milk, eggs, thyme, marjoram and parsley or any other spices/herbs you like.
  • Pour over top of casserole.
  • Bake about 45 minutes or until knife inserted in center comes out clean.
  • Sprinkle 1 ½ cups cheese over top of casserole and heat through an additional 5-10 minutes.

Notes

NOTE: You can easily spice this casserole up with herbs or seasonings that add more flavor or heat if you prefer.
 
 
NOTE: The original directions said to bake this casserole at 400. This seemed too hot and the casserole burned quickly. I've taken the temperature down to a more moderate 350 and bake it slightly longer to avoid burning.
 
 
NOTE: If you want a spicier casserole, use Pepper Jack cheese.
