Pecan Treats is a vintage recipe that we bake every year for the holidays. These fabulous miniature pecan pie-type treats are festive and beautiful but also rich, decadent and absolutely mouthwatering. If you enjoy Pecan Pie, you'll love these bite-sized cookies.

Equipment

  • 1 large miniature muffin pin 24 or 48 tins
  • 2 medium mixing bowls
  • 2 wooden spoons
  • measuring spoons
  • measuring cups
  • 1 nut chopper unless pecans are already chopped
  • 1 electric mixer
  • 2 wire cooling racks

Ingredients
  

SHELL:

  • 8 oz. pkg. cream cheese softened
  • 1/2 cup unsalted butter melted or softened (1 stick)
  • 1 cup UNBLEACHED all-purpose flour (bleached flour toughens baked goods)

PECAN FILLING:

  • 1 cup light brown sugar packed
  • 1 large egg
  • 1 cup pecan pieces (measure after chopping)

Instructions
 

SHELL:

  • Spray miniature muffin tins with cooking spray.
  • Combine dough ingredients with mixer on low speed of mixer.
  • Use about 1 rounded tablespoonful of dough (shell) for each tin.
  • Press in bottom and sides.

PECAN FILLING:

  • Mix brown sugar, pecans and egg with a wooden spoon until combined.
  • Fill each muffin shell with approximately 1/2 teaspoonful filling and press lightly into shell.
  • Bake at 350° for 20-25 minutes.
  • Rotate racks about half way through cooking time.
  • Cool 45 minutes in pans before removing to wire rack.
  • Add paper cupcake holders after, if desired.

Notes

NOTE: Our oven was running slow. It took 45 minutes for these miniature pecan pies to be fully cooked.
 
NOTE: It is easier to work with this recipe if the dough is at room temperature and the filling has been chilled.
 
NOTE: Do not overfill the shells because the brown sugar filling expands a lot during baking. It will over flow the shell and then the Pecan Treats become very difficult to remove from the pans.
 
NOTE: I have used both melted and softened butter for the crust/shell with good results either way.
 
NOTE: There is actually enough pecan filling for at least two batches of the crust.
