This lovely Greek-type salad has an amazing homemade marinade that makes this salad really special. It's terrific for potlucks, backyard barbecues and summer holiday fun like Memorial Day or Labor Day. It's so easy you can make this any time of the year. Gluten free.

GREEK TOMATO SALAD: 6 large tomatoes sliced, I use Roma tomatoes 1/4 lb. Feta cheese crumbled, or more if desired 1/4 red onion thinly sliced and separated into rings 2.5 oz. can black olives sliced or about 1/2-2/3 cup Kalamata olives, drained MARINADE: 1/2 cup olive oil 1/3 cup red wine vinegar 2 tbsp. dried parsley 1/2 tsp. dried basil 1/2 tsp. dried oregano 1/3 cup granulated sugar original recipe is 1/3 cup – you can decrease to 2 tablespoons if you want less sugar 1/4 tsp. Salt and pepper
NOTE : This salad is also good decreasing the salad dressing to about 2 tablespoons of sugar.
