Sweet Potato Fries are sensational! This delicious sweet potato recipe is so quick and easy to make. It uses only three ingredients, yet it's fabulous in taste. Great side for any meat entree. Gluten free and vegan.

Equipment

  • 1 vegetable peeler
  • 1 9x13" glass baking dish
  • 1 sharp knife
  • 1 pastry brush to brush the olive oil on the sweet potatoes
  • measuring spoons

Ingredients
  

  • 4 large sweet potatoes peeled, and cut in thin strips like French fries
  • 2 tbsp. olive oil or as needed
  • 1 tbsp. cinnamon or as desired

Instructions
 

  • Peel potatoes with a vegetable peeler.
  • Slice each potato into 5 or 6 slices lengthwise.
  • Slice each individual slice again in 5 or 6 slices.
  • Slice each individual piece again in half or thirds to make French fries.
  • Spray the bottom of a 9x13” baking dish with olive oil cooking spray.
  • Place one layer of sweet potato fries in pan.
  • Brush with olive oil (start with about ¼ cup).
  • Sprinkle heavily with cinnamon.
  • Repeat layers twice, brush with olive oil again.
  • Sprinkle heavily with cinnamon.
  • Bake at 450° about 30 minutes, or at 350° about 45-60 minutes or until done.
  • Serves 6-8.

Notes

NOTE: You can also sprinkle the cinnamon on top of the potatoes after baking.
