Oven Barbecued Chicken and Biscuits

This spectacular barbecued chicken dish is so easy and uses only 7 ingredients. It's made with a side of Italian-style biscuits that are drenched in the BBQ sauce before baking. This awesome entree is terrific for weeknight dinners, but it's nice enough to serve for company or holidays like Mother's Day, Father's Day or summer holidays.

Equipment

  • 1 9x13" glass baking dish
  • 1 mixing bowl
  • measuring cups
  • cutting knife

Ingredients
  

  • 2 1/2 - 3 lb. whole fryer cut up or boneless chicken breasts or thighs
  • 1 1/4 cups prepared BBQ sauce I like KC Masterpiece original or Sweet Baby Rays
  • 1/4 tsp. salt
  • 1 small onion chopped
  • 1/4 cup water
  • 2 tbsp. Parmesan cheese
  • 1/2 tsp. Italian seasoning or oregano
  • 8 oz. can refrigerated biscuits

Instructions
 

  • Preheat oven to 375°.
  • In greased 9x13” pan, place chicken pieces and sprinkle with salt.
  • Combine barbecue sauce, water and onion in a small bowl; pour over chicken.
  • Bake uncovered for 30 minutes.
  • Turn chicken pieces over and spoon sauce over top.
  • Bake 10-15 minutes longer or until tender.
  • If necessary, add 2-3 tbsp. more water to prevent sticking.
  • Move chicken to one side of pan.
  • Spoon sauce over top of chicken.
  • Combine Parmesan cheese and seasoning; set aside.
  • Dip biscuits in remaining sauce in pan and turn over sauce-side-up.
  • Place in opposite end of pan from chicken.
  • Sprinkle cheese/seasoning mixture over biscuits.
  • Return to oven and continue baking 15-20 minutes or until biscuits are brown.

Notes

NOTE: This recipe works best with smaller refrigerated biscuits—not the large grands and other huge, thick biscuits.
 
NOTE: Boneless chicken breasts also work wonderfully for this recipe.
 
NOTE: I usually sprinkle the biscuits with Italian seasoning and then sprinkle with the Parmesan cheese. I've used freshly grated parmesan cheese and cheese blends along with canned grated Parmesan cheese. All work fine in this recipe.
