Parmesan Potatoes with Thyme is outstanding. This tasty potato recipe uses spiraled potatoes for a different texture that's quite amazing. It's seasoned with herbs and parmesan cheese then drizzled with avocado oil. It's a lovely side dish for company or holiday menus, but it's easy enough to make for family dinners. Gluten free.

Equipment

  • 1 spiralizer
  • 1 baking dish
  • 1 vegetable peeler
  • 1 small bowl
  • 1 wooden spoon
  • measuring cups
  • measuring spoons

Ingredients
  

  • 2 large potatoes or 4 small potatoes, peeled and sliced into French-fry shapes or spiralized
  • 1/3 cup Parmesan cheese grated
  • 1 tsp. lemon pepper
  • 3/4 tsp. garlic salt
  • 1 tsp. dried thyme
  • 1 tbsp. olive oil or avocado oil, as needed

Instructions
 

  • Preheat oven to 400°.
  • Peel potatoes, slice in strips like French fries or spiralize.
  • Set aside.
  • Mix Parmesan cheese, lemon pepper, garlic salt, and thyme in a small bowl.
  • Place potatoes in a greased 9x13” glass baking dish.
  • Sprinkle parmesan cheese mixture on top.
  • Drizzle olive oil or avocado oil over top of potatoes.
  • Bake at 400° for about 20-30 minutes or until lightly browned.
