Cinnamon Chip Oatmeal Raisin Bars

These spectacular, amped up Oatmeal Raisin Cookies are loaded with cinnamon chips, oatmeal and raisins. They are absolutely the ultimate Oatmeal Raisin dessert. They're so rich and decadent, you'll be hard pressed to stop at just one! They're great for tailgating parties, potlucks or holiday baking. Be sure you make plenty, because everyone will want seconds or thirds!

Equipment

  • 1 10x15" baking dish or cookie sheet pan
  • 1 large mixing bowl
  • 1 electric mixer
  • 1 wooden spoon
  • 1 spatula
  • measuring cups
  • measuring spoons

Ingredients
  

  • 1 cup unsalted butter softened, 2 sticks
  • 1 cup light brown sugar packed
  • 1/3 cup granulated sugar
  • 2 large eggs
  • 1 1/2 tsp. vanilla extract
  • 1 1/2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
  • 1 tsp. baking soda
  • 2 1/2 cups oatmeal I use old-fashioned not quick-cooking oatmeal
  • 10 oz. pkg. hershey's cinnamon chips divided use
  • 3/4 cup golden raisins or regular raisins

Instructions
 

  • Heat oven to 350°.
  • Beat butter, sugars, eggs, vanilla and baking soda in a bowl with an electric mixer until well mixed.
  • Reserve 1/3 cup cinnamon chips for top.
  • Stir in flour, oatmeal, remaining cinnamon chips and raisins. (Batter will be stiff).
  • Spread into a greased 10x15” baking dish.
  • Sprinkle with reserved cinnamon chips.
  • Bake 30-40 minutes or until lightly golden and a toothpick inserted in center comes out clean.
  • Cool completely.
  • Cut into bars.

Notes

NOTE: These bars can be changed up a little by adding nuts, changing out the raisins for craisins or apricots, or having a nice cinnamon glaze over top.
