Cajun Red Beans and Rice is the ultimate in southern comfort food. It's wonderful for cool, fall or winter nights and is hearty, filling and totally satisfying. This delicious recipe is quick and easy because you use ready-made rice and beans mix.

Equipment

  • 2 large bowls one each to soak rice and to soak beans
  • 1 large stock pot with lid to cook beans
  • 1 large sauce pan with lid to cook rice
  • 2 wooden spoons
  • measuring cups
  • measuring spoons
  • 1 sharp knife to cut vegetables

Ingredients
  

  • 20 oz. pkg. H-E-B Cajun style red beans with seasoning packet
  • 20 oz. pkg. H-E-B Brown and Wild rice blend
  • water as needed
  • 1 medium onion diced
  • 12 oz. pkg. diced ham
  • 1/2 tsp.. Salt & pepper to taste
  • 2-3 tbsp. avocado oil or olive oil

Instructions
 

  • Place beans in a large bowl and cover with water.
  • Soak several hours or overnight.
  • Place rice in a large bowl with water and soak several hours.
  • Rinse beans and place in large stockpot.
  • Add 12 cups of water, the seasoning packet, ham and onion.
  • Bring to a boil.
  • Reduce heat and simmer about 1 hour 45 minutes or until beans are tender.
  • Remove rice from water and place in stockpot.
  • Add 10-12 cups of water and a few tablespoonfuls of oil.
  • Bring to a boil, reduce heat and cook until done, about 30-35 minutes.
  • To serve, place serving spoonfuls of rice on plate.
  • Top with a serving spoonful of beans (draining the broth).
  • Season generously with salt and pepper.
  • Garnish with parsley, if desired.
  • Serve.

Notes

NOTE: This would probably be really excellent with a ham bone and some leftover spiral cut ham, or sliced summer sausage.
 
NOTE: Preparation time does not include time necessary to soak beans or rice. I recommend soaking them overnight.
 
NOTE: This can also be made easily in the crock pot.
