Tasty pasta dish actually makes 2 large casseroles. The recipe is filled with four kinds of pasta, spaghetti sauce, ground beef and topped with mozzarella cheese. It's kid-friendly and terrific to make for company or on days when you're short on time!
1 hamburger chopper to cut meat down in small pieces while frying

2 9x13" glass baking dishes

Ingredients
8cupsuncooked pasta, four assorted pasta shapes of your choiceI used bow-ties, rotini, sea shells and pasta ribbons
2lbs.ground beef
2mediumgreen pepperschopped, I used one yellow and one orange because we like their flavor better than green
1largeoniondiced
2cupsfresh mushroomssliced
116oz. jarmeatless spaghetti sauceany flavor will do (four 29-ounce jars)
2largeeggsslightly beaten
16oz. Mozzarella cheeseshredded
Instructions
Cook pasta according to package directions (for each kind) in a large sauce pans or stockpots. (Each one will require different lengths of cooking time).
Meanwhile, in a large skillet, cook the beef, peppers, onions and mushrooms over medium heat until meat is no longer pink; drain.
Use a hamburger chopper to break the meat into tiny pieces while frying.
Drain pasta in colander and place in a very large bowl; stir in beef mixture, spaghetti sauce and eggs.
Transfer to two greased 9x13” baking dishes.
Sprinkle with cheese.
Cover with foil and bake at 350° for 45 minutes or until bubbly.
Notes
NOTE: You can easily halve this recipe for one meal. I put the other casserole in the freezer for later.
