Tasty pasta dish actually makes 2 large casseroles. The recipe is filled with four kinds of pasta, spaghetti sauce, ground beef and topped with mozzarella cheese. It's kid-friendly and terrific to make for company or on days when you're short on time!

Equipment

  • 1 large stock pot with lid

  • 1 spatula
  • measuring cups
  • measuring spoons
  • 2 9x13" glass baking dishes
  • aluminum foil

Ingredients

  • 8 cups uncooked pasta, four assorted pasta shapes of your choice I used bow-ties, rotini, sea shells and pasta ribbons
  • 2 lbs. ground beef
  • 2 medium green peppers chopped, I used one yellow and one orange because we like their flavor better than green
  • 1 large onion diced
  • 2 cups fresh mushrooms sliced
  • 116 oz. jar meatless spaghetti sauce any flavor will do (four 29-ounce jars)
  • 2 large eggs slightly beaten

  • Cook pasta according to package directions (for each kind) in a large sauce pans or stockpots. (Each one will require different lengths of cooking time).
  • Meanwhile, in a large skillet, cook the beef, peppers, onions and mushrooms over medium heat until meat is no longer pink; drain.
  • Use a hamburger chopper to break the meat into tiny pieces while frying.
  • Drain pasta in colander and place in a very large bowl; stir in beef mixture, spaghetti sauce and eggs.
  • Transfer to two greased 9x13” baking dishes.
  • Sprinkle with cheese.
  • Cover with foil and bake at 350° for 45 minutes or until bubbly.

Notes

NOTE: You can easily halve this recipe for one meal. I put the other casserole in the freezer for later.
