Spring Mix with Berries, Glazed Pecans and Feta Cheese

This festive and beautiful salad is filled with fruit, glazed pecans and feta cheese. In includes strawberries, blackberries, raspberries and blueberries. It's terrific for company or holiday dinners like Easter, Mother's Day or Father's Day. Gluten free.

Equipment

  • 1 large salad bowl with tongs
  • 1 sharp knife to cut vegetables
  • measuring cups
  • measuring spoons

Ingredients
  

  • 10 oz. container spring mix or butter bliss lettuce
  • 6 oz. bag baby spinach stems removed
  • 1 cucumber unpeeled
  • 1/3 cup red onion diced
  • 16 oz. container strawberries washed and sliced
  • 6 oz. ctn. blueberries
  • 6 oz. ctn. firm raspberries rinse lightly to preserve texture
  • 6 oz. ctn. blackberries
  • 8 oz. pkg. feta cheese crumbled
  • 1 1/2 cups glazed pecans or walnuts
  • 1 1/4 cups poppy seed dressing as desired

Instructions
 

  • Layer in above order omitting dressing.
  • Refrigerate until ready to serve.
  • Toss to serve, add dressing individually as desired.

Notes

NOTE: This is a sweet salad that I usually serve with a homemade poppyseed dressing. You can use roasted pecans, cashews or almonds if you prefer a salad that is not quite so sweet.
