These cookies are rich, chunky and utterly delightful. Perfect for tailgating or office parties, soccer practice, potlucks, backyard barbecues or a Christmas Cookie Exchange. Beware! Equipment

  • 3 large cookie sheets or pans
  • 1 large mixing bowl
  • 1 electric mixer
  • 1 wooden spoon
  • 1 spatula
  • 1 1/4 cup cookie scoop
  • measuring cups
  • measuring spoons

Ingredients
  

  • 1 cup salted butter softened (2 sticks)
  • 1 cup creamy peanut butter
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar packed
  • 2 large eggs
  • 1 1/2 tsp. vanilla extract
  • 2 1/2 cups unbleached all-purpose flour bleached flour toughens baked goods
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. sea salt
  • 3 1/2 cups honey roasted peanuts

Instructions
 

  • Preheat oven to 350 degrees.
  • Cream butter, peanut butter, sugars, eggs and vanilla in a large mixing bowl with an electric mixer until fluffy.
  • Stir flour, baking powder, baking soda and salt together.
  • Gradually stir dry ingredients and honey roasted peanuts into peanut butter mixture.
  • Keep stirring until thoroughly mixed; this may take 3-5 minutes.
  • With a large cookie scoop, scoop cookie dough and press the dough gently into the cookie scoop before leveling it off.
  • Place onto greased cookie sheets approximately 3-inches apart.  
  • Bake 12 to 15 minutes or until lightly browned.
  • Rotate cookies on racks every 6 to 7 minutes of baking time.
  • Cool completely.

Notes

NOTE: When I was baking two racks at a time, my cookies took 21 minutes to bake. When I baked a single rack (and didn’t need to rotate the cookies), the cookies took about 15 minutes to bake. Smaller cookies won’t take so long to bake.
 
NOTE: You can use crunchy peanut butter if that’s all you have. But this recipe already has a lot of crunch!
 
NOTE; I used 3 ½ cups because I was trying to get rid of a large container of peanuts. You can decrease this amount to about 2 cups if you prefer less peanuts.
