This one includes Mediterranean Feta Cheese, chickpeas, Kalamata olives, mild pepper rings, tomatoes and cucumbers in a delicious homemade olive oil and red wine vinegar vinaigrette. Equipment

  • 1 large salad bowl with tongs
  • 1 sharp knife to cut and chop vegetables
  • measuring cups
  • measuring spoons
  • 1 small bowl
  • 1 whisk

Ingredients
  

GREEK SALAD:

  • 18 oz. pkg. romaine lettuce mix
  • 10.5 oz. pkg. grape tomatoes quartered or diced (1 dry pint)
  • 1 large cucumber quartered and sliced
  • 1 large green bell pepper seeded and diced
  • 1/3 cup red onion diced finely
  • 1 cup Kalamata olives pitted, drained and sliced
  • 1 cup mild banana pepper rings drained and diced
  • 1 cup chickpeas rinsed and drained
  • 8 oz. pkg. Mediterranean Feta Cheese crumbled

SALAD DRESSING:

  • 1/2 cup extra virgin olive oil
  • 1/3 cup red wine vinegar
  • 2 to 3 tbsp. granulated sugar
  • 1 tsp. dried parsley
  • 1 tsp. dried basil
  • 1 tsp. dried oregano
  • 3/4 tsp. pink himalayan sea salt
  • 1/2 tsp. ground black pepper

Instructions
 

GREEK SALAD:

  • Layer in above order.
  • Add the dressing and pour over salad just before serving.
  • Or, place salad on individual salad plates and add dressing individually as desired.

SALAD DRESSING:

  • Combine ingredients in a small bowl and whisk well before serving with salad.

Notes

NOTE: This is also very good with grilled chicken, avocados and hard-boiled eggs
