Cheesy Mixed Vegetable Casserole is outstanding. This delightful side dish includes mixed vegetables in a sour cream and cheddar cheese base with diced celery and onions. It's topped with a Ritz cracker and cheddar cheese topping that makes everything just wonderful. This is a terrific casserole for company or holiday dinners like Thanksgiving, Christmas or Easter.
Microwave each bag of vegetables about 5 minutes on high.
Combine mixed vegetables with celery, onion, sour cream, 1/2 cup of cheddar cheese and salt and pepper in a medium mixing bowl with a wooden spoon.
Pour mixture into greased 2 qt. casserole dish.
Then combine remaining ingredients and sprinkle on top: 2 cups Ritz Cracker crumbs, 1/2 cup melted butter and 1/2 cup sharp cheddar cheese.
Stir with a fork and spread cracker mixture over top of casserole dish.
Bake at 300 degrees for 30-40 minutes.

NOTE: The original recipe calls for mayonnaise instead of sour cream. John doesn’t normally care for mayonnaise cooked in a recipe. I usually substitute sour cream instead.NOTE: This can be baked at a higher temperature if you are trying to cook several casseroles at once. Adjust time accordingly.NOTE: I have also prepared this casserole up to the point of baking and refrigerated it for several hours. If baking cold, it will take longer to bake. Adjust cooking time accordingly.
