Confetti Cole Slaw

Confetti Cole Slaw is an outrageously good Cole Slaw your family is sure to love. It gets its "confetti" name from the many different colors of ingredients such as pineapple, 4 kinds of Bell Peppers, celery, red onion and carrots. It uses a sweet Cole Slaw Dressing that makes it spectacular. Marvelous for summer holiday fare, backyard barbecues and potlucks.

1 head cabbage shredded 2 medium carrots shredded 1/2 medium orange bell pepper diced 1/2 medium red bell pepper diced 1/2 medium yellow bell pepper diced 1/2 medium green bell pepper diced 1/3 cup red onion finely diced 1 cup celery finely diced 8 oz. can pineapple tidbits drained 1 cup LiteHouse Cole Slaw Dressing or as desired
Put cabbage and carrots in food processor and slice or shred.
Transfer to a large mixing bowl.
Add finely diced bell peppers, celery and the red onion.
Drain pineapple tidbits and add to salad mixture.
Add salad dressing and stir well to combine.
Refrigerate until ready to serve.
NOTE: I purchased LiteHouse Cole Slaw Dressing in the refrigerated case in the produce section of the grocery store.
