Confetti Cole Slaw is an outrageously good Cole Slaw your family is sure to love. It gets its "confetti" name from the many different colors of ingredients such as pineapple, 4 kinds of Bell Peppers, celery, red onion and carrots. It uses a sweet Cole Slaw Dressing that makes it spectacular. Marvelous for summer holiday fare, backyard barbecues and potlucks.

Equipment

  • 1 food processor
  • 1 large mixing bowl or salad bowl
  • 1 wooden spoon
  • 1 sharp knife to dice vegetables
  • measuring cups
  • measuring spoons

Ingredients
  

  • 1 head cabbage shredded
  • 2 medium carrots shredded
  • 1/2 medium orange bell pepper diced
  • 1/2 medium red bell pepper diced
  • 1/2 medium yellow bell pepper diced
  • 1/2 medium green bell pepper diced
  • 1/3 cup red onion finely diced
  • 1 cup celery finely diced
  • 8 oz. can pineapple tidbits drained
  • 1 cup LiteHouse Cole Slaw Dressing or as desired

Instructions
 

  • Put cabbage and carrots in food processor and slice or shred.
  • Transfer to a large mixing bowl.
  • Add finely diced bell peppers, celery and the red onion.
  • Drain pineapple tidbits and add to salad mixture.
  • Add salad dressing and stir well to combine.
  • Refrigerate until ready to serve.

Notes

NOTE: I purchased LiteHouse Cole Slaw Dressing in the refrigerated case in the produce section of the grocery store.
