Apple Fruit Fajitas
Teresa Ambra
Apple Fruit Fajitas is a terrific recipe that's great for either breakfast or dessert. It uses only four ingredients including caramel apple pie filling and tortillas. Then a syrup is poured over the tortillas before baking. This scrumptious dessert is great for any Tex-Mex themed dinner or holiday like Cinco de Mayo. But so easy that you can whip it up and enjoy it frequently for any kind of dinner menu.

ROLL UPS:
- 1 can caramel apple pie filling
- 20 small tortillas
SYRUP:
- 2 cups granulated sugar
- 1/2 cup butter (1 stick)
- 1 1/2 cups water
ROLL UPS:
Place a tablespoon or so of pie filling at one end of the tortilla.
Roll up and place in sprayed 9x13” baking pan.
Pour sugar mixture over top and LET STAND 45 MINUTES TO ABSORB.
Bake at 350° for 30-40 minutes, covered, until done.
(You must cover the pan or the fajitas dry out too much).
SYRUP:
Place syrup ingredients into a small saucepan and cook over low to medium heat.
Continue heating until butter is melted.
Remove from stove top and use in recipe as instructed above.
NOTE: I used one 10x15” baking dish and one 7x10” baking dish.
NOTE: I baked the fajitas 40 minutes covered and 10-15 minutes uncovered before serving.
NOTE: You really need about 1 1/2 batches of syrup to adequately cover the rolled tortillas in the baking dishes.
NOTE: After pouring the syrup over top of the rolled tortillas, the dish needs to be set out on the counter for 45 minutes before baking. This allows the tortillas to absorb a lot of the syrup.
NOTE: You must cover the pan with foil while baking or the fajitas dry out too much.
