Cheesy Green Bean Casserole

Cheesy Green Bean Casserole is NOT the typical Green Bean Casserole served during the holidays. This one is SO much better! It has a sour cream and cheddar cheese base making it creamy, and a Ritz Cracker and Cheddar Cheese topping making it crunchy. Fantastic for company or holiday meals like Mother's Day or Father's Day.

Equipment

  • 1 large baking dish or the rectangular crock pot if you want to slow cook the reccipe
  • 1 large mixing bowl
  • 1 small mixing bowl
  • 2 wooden spoons
  • 1 Rolling Pin unless you want to crush the Ritz crackers in your hands
  • measuring cups
  • measuring spoons
  • 1 sharp knife to cut vegetables
  • 1 fork

Ingredients
  

  • 36 oz. bag whole green beans (three 12-ounce bags)
  • 1 cup celery chopped
  • 1/3 cup onion chopped
  • 1 cup sour cream
  • 1/2 cup sharp Cheddar cheese shredded
  • 1/4 tsp. sea salt
  • 1/8 tsp. ground black pepper or to taste
  • 2 cups Ritz crackers crushed
  • 1/2 cup butter melted (1 stick)
  • 1/2 cup sharp Cheddar cheese shredded

Instructions
 

  • Cook green beans in microwave and drain.
  • (I cook each 12-ounce bag for about 5 minutes on high).
  • In a large mixing bowl, combine green beans with celery, onion, sour cream, 1/2 cup of Cheddar cheese and salt and pepper to taste.
  • Pour into a greased 2-quart casserole dish.
  • Then combine remaining ingredients (melted butter, Ritz cracker crumbs and 1/2 cup cheese) in a mixing bowl with a fork.
  • Sprinkle cracker crumb mixture over top of veggie mixture in casserole dish.
  • Bake at 300 degrees for 30-40 minutes.

Notes

NOTE: This is also good using just 24-ounces of green beans, rather than 36-ounces.
