Cranberry Relish

Cranberry Relish is a delightful accompaniment for holidays, especially when serving turkey, ham or Pork Tenderloin. We serve it over Homemade Rolls, but you can also eat it by the spoonful. This lovely concoction includes cranberries, raisins, walnuts, spices, lemon zest and orange juice. The combination of flavors and textures is mouthwatering and irresistible.

Equipment

  • 1 food processor
  • 1 grater or lemon zester
  • measuring cups
  • measuring spoons
  • 1 wooden spoon
  • 1 serving dish
  • 1 nut chopper if nuts are not previously chopped

Ingredients
  

  • 1 cup light brown sugar packed
  • 1/4 cup orange juice
  • 1 tbsp. lemon juice
  • 2 cups fresh cranberries washed and grated in a food processor
  • 1/2 cup seedless raisins
  • 1 1/2 tsp. grated lemon peel
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. ground allspice
  • 1/4 tsp. ground cloves
  • 1/4 cup walnuts chopped (measure after chopping)

Instructions
 

  • Put cranberries through a food processor using coarse blade.
  • Add remaining ingredients except nuts and stir well.
  • Chill one hour or more.
  • Add nuts before serving.
