Watermelon Feta Salad is a light and refreshing salad that's perfect for summer days, potlucks or company dinners. This one includes watermelon, grape tomatoes and Feta Cheese along with an easy homemade Balsamic Vinaigrette. It's not only festive and beautiful to look at, it's incredibly delicious and so irresistible you're going to want more than one serving!
1/3cupred onionsliced and separated into rings (original recipe used one cup)
2lbs.watermelon ballsor chunks (seeded)
4oz.Feta cheesecrumbled (or more, if desired)
Instructions
Whisk olive oil, balsamic vinegar and salt in a mixing bowl (or serving bowl).
Add grape tomatoes, arugula and red onion and stir to combine.
Gently stir in watermelon and Feta Cheese.
Serve.
Notes
NOTE: I used a melon baller rather than cutting the watermelon in chunks.NOTE: The original recipe called for one cup of sliced red onion. I thought that would overpower the salad so I lowered the amount to 1/3 cup. We found this amount completely satisfactory without being overpowering.
