Alfredo Potatoes

Alfredo Potatoes are phenomenal! Spice up regular Mashed Potatoes with this heavenly recipe. Alfredo sauce makes all the difference. Terrific for company or holiday dinners and great served with chicken, beef, pork or fish.

1 sharp knife to cut vegetables
measuring cups
measuring spoons
1 large sauce pan with lid
1 colander
1 potato masher
1 serving dish as desired
2/3 cup onion chopped 8 large red potatoes quartered 11 oz. container refrigerated Alfredo sauce 2 tbsp. unsalted butter 1/4 tsp. ground black pepper 1 tbsp. fresh chives minced
Place potatoes in a large sauce pan.
Cover with water; bring potatoes to a boil.
Reduce heat; cover with lid and simmer potatoes for 15-20 minutes or until potatoes are fork tender.
Drain potatoes in colander.
Return potatoes to large sauce pan.
Mash potatoes with Alfredo sauce, onions, butter, pepper and half the chives.
Transfer mixture to serving dish.
Sprinkle with remaining chives.
Serve with sliced Italian Pot Roast and gravy.
If desired, drizzle gravy over top of potatoes before serving.
