Amish Breakfast Casserole is a fantastic entree for holiday breakfasts! This one uses 2 meats, 3 cheeses, hash browns, eggs and bell peppers. The flavors blend incredibly well. This amazing casserole is gluten free.

1 9x13" glass baking dish
2 large skillets
1 sharp knife to cut vegetables
1 large mixing bowl
1 wooden spoon

1 hamburger chopper to chop sausage down into small pieces while frying
1 lb. bacon diced 1 medium sweet onion chopped 6 large eggs lightly beaten 4 cups frozen hash browns shredded, thawed 2 cups sharp cheddar cheese shredded 1 1/2 cups small curd cottage cheese 1 1/4 cups Swiss cheese shredded 1 lb. mild, bulk pork sausage 1/2 red bell pepper diced 1/2 green bell pepper diced 1 tbsp. fresh, snipped chives for garnish
In a large skillet, cook bacon and onion until bacon is crisp; drain.
In a separate skillet cook sausage and bell peppers.
Use a hamburger chopper to break the sausage meat down into small pieces while frying.
In a very large mixing bowl, combine the remaining ingredients; stir in bacon mixture and sausage mixture.
Transfer to a greased 13-in. x 9-in. x 2-in. baking dish.
Bake, uncovered, at 350° for 35-40 minutes or until set and bubbly.
Let stand for 10 minutes before cutting.
NOTE: You can also make this ahead and refrigerate overnight before baking.
