Artichoke Hummus

Artichoke Hummus is a fantastic appetizer for any kind of party or potluck. This delicious hummus recipe features artichoke hearts, garlic and garbanzo beans. It's healthy, vegan and gluten free. Excellent option for week-day snacks when you want a low calorie option.

Equipment

  • 1 blender
  • measuring cups
  • measuring spoons
  • 1 wooden spoon
  • 1 sharp knife to mince garlic
  • 1 plate
  • 1 fork

Ingredients
  

  • 15 oz. can garbanzo beans reserve 4-5 tbsp. liquid from can
  • 1/3 cup tahini sesame paste
  • 6 tbsp. lemon juice or the juice from two lemons
  • 8 drops hot sauce
  • 1 1/2 tsp. sea salt or kosher salt
  • 14.5 oz. can quartered artichoke hearts rinsed and drained
  • 4 cloves garlic minced or sliced

Instructions
 

  • Drain garbanzo beans reserving liquid.
  • Place beans on a plate and mash with a fork.
  • Place all the ingredients in a blender or food processor and process until smooth.
  • Be sure to add a few tablespoons of liquid from the garbanzo bean can.
  • You may have to stop and stir ingredients with a wooden spoon in order to keep pulsing with the blender.
  • Makes about 2 cups.

Notes

NOTE: For a smoother, creamier texture, mash garbanzo beans with a fork before adding them to your blender or food processor.
 
 
NOTE: Most hummus recipes use olive oil. If you prefer your hummus with olive oil, add a tablespoon when processing in blender.
