Baked Corn will rock your world! This tasty Corn Casserole is made with creamed corn, topped with cheese and sauteed saltine cracker crumbs. It's quick, easy, economical and delicious! Great as a holiday side dish.

to crush crackers (or crush the crackers in your hands)
1 zip lock bag
WITHOUT the "stand and fill" bottom
1 wooden spoon
1 large skillet
Ingredients

cream-style corn
(two 15-ounce cans)

eggs
beaten

heaping tablespoon
granulated sugar

heaping tablespoon
flour
(I use unbleached flour)
1/3
cup
2% milk
1/2
cup
unsalted butter
(1 stick)
1/4
lb.
Saltine crackers
crushed, (about 1 cup)
1
heaping cup
sharp Cheddar cheese
grated, or more if desired
Instructions
Melt butter in skillet over low to medium heat.
Meanwhile, place crackers in a zip lock bag and crush with a rolling pin.
Add crushed crackers to the melted butter in skillet and saute until lightly brown.
(I just crush them in my hands and drop them in the skillet.)
Meanwhile, in large bowl, mix cream-style corn, granulated sugar, flour, eggs and milk.
Spray a 9x13” baking dish with cooking spray.
Pour corn mixture into prepared dish.
Top with cheese, then sautéed cracker crumbs.
Bake at 350° for 1 hour or a little over.
Do not cover while baking.
