Blackberry Almond Bars

Blackberry Almond Bars are outrageously delicious! These fabulous bar-type cookies have a shortbread crust, topped with a blackberry preserve filling and sliced almonds. They are melt-in-your-mouth good and irresistible for young and old alike. These are great treats for tailgating parties, potlucks, backyard barbecues and holiday baking.

CRUST: 1 1/2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods) 3/4 cup confectioners’ sugar 3/4 cup unsalted butter softened or melted TOPPING: 1 egg slightly beaten 1/2 cup granulated sugar 8-10 oz. blackberry preserves 1 tbsp. unsalted butter softened or melted 1/2 tsp. vanilla extract 3/4-1 cup almonds sliced
CRUST: In a mixing bowl, stir flour, granulated sugar and butter.
Spread into the bottom and ½ inch up the sides of a 9x13” glass baking dish that has been sprayed well with cooking spray.
Bake at 350° oven for 15-18 minutes or until lightly browned.
TOPPING: For topping, beat egg, sugar, preserves, butter and vanilla in a mixing bowl with a whisk until smooth.
Spread evenly over hot crust.
Sprinkle with almonds.
Bake at 350° for 15-20 minutes. Cool.
NOTE: These bars are much easier to cut if you freeze for one hour or refrigerate a couple of hours before serving.
