Blueberry Fruit Fajitas are mouthwatering and irresistible! These lovely fruit-filled tortillas are baked with a sugar syrup mixture poured over top that bakes into the tortillas. Each one is totally delectable. The tortillas are similar to crepes so this recipe is actually great as a breakfast idea as well as a dessert. This easy 4-ingredient recipe can't be beat!
Place a tablespoon or so of pie filling at one end of the tortilla.
Roll up and place in sprayed 9x13” baking pan.
Pour sugar mixture over top and LET STAND 45 MINUTES TO ABSORB.
Bake at 350° for 30-40 minutes, covered, until done.
(You must cover the pan or the fajitas dry out too much).
SYRUP:
Heat granulated sugar, water and butter in small saucepan until melted.
Pour evenly over top of the fajitas in baking dishes.
Allow fajitas to sit out on counter 45 minutes to absorb syrup before baking.
Follow instructions above.
Notes
NOTE: I used one 10x15” baking dish and one 7x10” baking dish.NOTE: I baked the fajitas 40 minutes covered and 10-15 minutes uncovered before serving.NOTE: After pouring the syrup over top of the rolled tortillas, the dish needs to be set out on the counter for 45 minutes before baking. This allows the tortillas to absorb a lot of the syrup.NOTE: You must cover the pan with foil while baking or the fajitas dry out too much.
