Captivate your senses by making up a batch of Caprese Tossed Salad. This amazing salad has the wonderful flavors of caprese but with a few extra vegetables and spinach to give it that Tossed Salad appearance and texture. It's simple, easy to make, and delightful for family or company dinners. It's a great way to use up garden veggies, too. Healthy, low calorie and gluten free.
1largecucumberpeeled and tined with a fork on all sides; sliced
1cupyellow grape tomatoeshalved
1cupred grape tomatoeshalved
1/2largered bell pepperjulienned
1/2largeorange bell pepperjulienned
1/2largeyellow bell pepperjulienned
1/4cupred onionvery finely diced
8oz.mozzarella cheese pearls
1/4cupfresh basil leavescut in thin strips
1/4tsp.sea salt
1/4tsp.ground black pepper
2tbsp.balsamic vinegar
2tbsp.olive oil
Instructions
Arrange spinach-arugula mix on a platter, serving plate or salad bowl.
Top with cucumbers, tomatoes, bell peppers, red onion and mozzarella cheese pearls.
Sprinkle mixture with salt, pepper and basil.
Drizzle the salad with oil and vinegar and allow to stand at least 15 minutes before serving.
Notes
NOTE: I have a jar of olive oil in a spray container so I sprayed on the olive oil. I may have used less than 2 tablespoons.NOTE: I placed the salad in a 9x13” glass baking dish.
