This delicious chicken main dish is filled with veggies including butter beans, tomatoes, carrots, onion and garlic. Then it's seasoned with thyme and oregano providing wonderful Italian flavors to the dish.
1broiler-fryer chicken . cut up (or use about 6 boneless, skinless chicken breasts instead)3-4 lbs
3tbsp.olive oil
1 1/2cupschopped onion
3garlic cloves, mincedor use 1 heaping teaspoon of minced garlic from a jar
2cansgreat northern beansrinsed and drained
29-oz. candiced tomatoesdrained
3medium carrotssliced 1/4” thick
1tbsp.instant chicken bouillonor use chicken broth
1 1/2tsp.thyme
1/2-1tsp.oregano
1/2 -3/4tsp.pepper
Instructions
In a skillet, brown the chicken in oil; remove and set aside.
Sauté onion and garlic in drippings until tender.
Stir in remaining ingredients.
Spoon into a 3-qt. baking dish; arrange chicken pieces on top.
Cover and bake at 350° for 65-75 minutes or until chicken juices run clear.
Notes
NOTE: This may not sound like it would be so good, but this recipe is absolutely delicious and has a wonderful flavor.NOTE: For Gluten-Free diets, eliminate the chicken bouillon and substitute chicken broth and other seasonings of your choice.NOTE: Boneless, skinless chicken breasts may take longer to cook through completely.NOTE: You can also brown the chicken with the onions, garlic and carrots and stir it into the other ingredients (without heating them) and pour mixture into a greased baking dish.
