Colorful Tomato Mozzarella Salad is a light & refreshing Caprese-style salad. It's elegant & beautiful enough for company dinners, but so easy you can whip it up for family meals. Every bite is so palate pleasing. We like to serve it at potlucks and Backyard Barbecues because it's always a crowd-pleaser. GlutenFree.

Equipment

  • 1 medium to large serving platter
  • 1 sharp knife
  • 1 cutting board
  • measuring spoons

Ingredients
  

  • 1 cup baby spinach de-stemmed
  • 2 medium yellow tomatoes sliced
  • 2 medium red tomatoes sliced
  • 4 oz. fresh mozzarella cheese (in a round) sliced
  • 2 tbsp. fresh basil leaves thinly sliced
  • 1/4 tsp. sea salt
  • 1/4 tsp. ground black pepper
  • 1 tbsp. balsamic vinegar
  • 1 to 2 tbsp. olive oil

Instructions
 

  • Arrange spinach leaves on a platter or serving plate.
  • Top with alternating tomato and cheese slices.
  • Sprinkle with salt, pepper and basil.
  • Drizzle the salad with oil and vinegar and allow to stand at least 15 minutes before serving.

Recipe adapted from Taste of Home. This is not the exact link for the recipe in the Light and Tasty, 2008 cookbook that I used. But it was the closest in ingredients used.
