Corn 'n' Broccoli Bake

Corn 'n' Broccoli Bake is a wonderful side dish for company and holiday menus. It's filled with broccoli, creamed corn, saltine crackers and onions for a wonderful taste and crunchy texture.

Ingredients
  

  • 16 oz. can Libby’s cream-style corn
  • 12 oz. pkg. frozen chopped broccoli thawed
  • 1/2 sleeve saltine crackers crushed
  • 1 large egg beaten
  • 1 tbsp. dried minced onion
  • dash pepper
  • 2 tbsp. Land ‘O Lakes unsalted butter melted

Instructions
 

  • In a bowl, combine the corn, broccoli, ¼ cup of saltines, egg, onion and pepper.
  • Place in a greased 1 ½-qt. baking dish.
  • Combine the butter with remaining saltines; sprinkle over top.
  • Cover and bake at 350° for 45 minutes.

Notes

NOTE: I didn’t use all of the saltine crackers for the topping.
