Cracked Out Sweet Cornbread

This delicious cornbread recipe uses stone-ground cornmeal, cheddar cheese, honey, creamed corn, sour cream and Homemade Ranch Dressing Mix. It has amazing flavor and texture. Gluten free.

- 1 cup Wayside Inn stone-ground cornmeal or other good stone ground cornmeal
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. pink Himalayan sea salt
- 1 cup sour cream
- 1/2 cup honey or sugar
- 14.5 oz. can creamed corn
- 1 1/4 cups sharp cheddar cheese shredded
- 3 slices thick-sliced bacon cooked and crumbled
- 1 tbsp. homemade dry Ranch dressing mix or from a Ranch dressing packet
- 2 large eggs
- 1/2 cup avocado oil or melted coconut oil
Preheat oven to 450°.
Grease an 8x12” glass baking dish or a 10” cast-iron skillet.
Combine ingredients with a wooden spoon.
Pour into prepared baking dish or skillet.
Bake at 450° for 30-35 minutes or until golden brown.
