Cranberry White Chocolate Cookie Cups

Cranberry White Chocolate Cookie Cups are rich, decadent and outrageously addictive! One bite and you'll want more. These lovely cookies are baked in muffin tins and include dried cranberries and real white chocolate chips. They're sure to cure any sweet tooth craving and are perfect for any tailgating party, potluck or dessert menu.

Equipment

  • 2 12-tin regular sized muffin pans
  • 1 large mixing bowl
  • 1 electric mixer
  • 1 wooden spoon
  • measuring cups
  • measuring spoons
  • 1 wire cooling rack

Ingredients
  

  • 1 cup salted butter softened (2 sticks)
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar packed
  • 1 1/2 tsp. pure vanilla extract
  • 2 large eggs
  • 2 1/2 cups unbleached all-purpose flour (bleached flour toughens baked goods)
  • 1 tsp. baking soda
  • 1/2 tsp. sea salt
  • 12 oz. pkg. white chocolate chips (NOT vanilla chips or premiere white baking chips)
  • 1 1/2 cups dried cranberries

Instructions
 

  • Spray 24 regular-sized muffin tins with cooking spray; set aside.
  • Cream butter, sugar, brown sugar and vanilla, eggs, baking soda and salt in a large mixing bowl with an electric mixer until light and fluffy.
  • Beat well.
  • Add flour, white chocolate chips and dried cranberries.
  • Stir really well to combine.
  • This may take 4-5 minutes.
  • Scoop cookie dough with a large cookie scoop and pack into the scoop until it’s completely full.
  • Place scoops of cookie dough into sprayed muffin tins.
  • Bake at 350° for about 20 minutes.
  • Cool completely before removing cookie cups from muffin tins. 

Notes

NOTE: I started with 3 cups flour but cut back to 2 ½ cups because that was sufficient.
 
NOTE: The cookie cups may sink slightly in the middle while cooling.
 
NOTE:  This recipe uses REAL white chocolate chips, NOT vanilla chips or premiere white baking chips. Those have NO cocoa in them and are not white chocolate. In the Dallas Metroplex the only place I can find true white chocolate chips is at Kroger (Private Selection) or Trader Joe's.)
