Creamy Cauliflower Casserole

Creamy Cauliflower Casserole is an outrageously delectable side dish that's perfect for company or holiday dinners like Thanksgiving or Christmas. It's made with Cheddar Cheese, Parmesan or Romano cheese and includes Ritz Crackers in the dish. Every bite is so mouthwatering and heavenly. Even those who don't normally care for cauliflower will love it prepared this way.

1 large sauce pan or stock pot with lid
1 colander
1 large mixing bowl
1 wooden spoon
1 8x12" glass baking dish or two-quart casserole dish
measuring cups
measuring spoons
1 sharp knife to cut vegetables
1 head cauliflower broken into florets 1 cup sour cream 1 cup sharp cheddar cheese shredded 1/2 cup Ritz crackers crushed 1/4 cup green bell pepper diced 1/4 cup red bell pepper diced 1 tsp. sea salt 1/2 cup parmesan cheese grated (I used grated Romano cheese)
Place cauliflower in a large saucepan filled with one inch water.
Heat/steam until tender, about 5 minutes.
Drain in colander.
Transfer mixture to a mixing bowl.
Add sour cream, cheddar cheese, Ritz crackers, bell peppers and salt.
Spoon ingredients into a a greased 8x12” glass baking dish.
Sprinkle with parmesan cheese (Romano or Italian cheese blend).
Bake at 325 degrees for 30 minutes.
